Kabayan or Kababayan muffin for lunch

Yes, that is right, i only ate 4 of these Pinoy muffins called kabayan for lunch. It was part of my weight loss challenge. 


Just 4 of these and it made me full right away. Well, it's not one of those breads that looks so big in the outside but inside, it really is just full of air. This is one has full, intact, rich taste packed in that small size of it.


I've been eating this muffin ever since i was a kid. And i kinda grew into it. 


Like with some of its's pinoy bread counterpart pan de sal and ensaymada, kabayan great with hot chocolate or coffee.


This is also very affordable and you can buy it at any small or big bakery is nearest you.





INGREDIENTS:

  • 1 1/2 cups all purpose flour
  • 3/4 cup brown sugar
  • 2 tsp baking powder
  • 2 eggs
  • 3/4 cup milk
  • 1/2 cup  cooking oil 
  • 2 tbsp vanilla extract   
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 tbsp melted butter
1/4 cup sugar for sprinkling  (optional)



 Baking procedures:

1.  Combine salt, sugar, cream of tartar and soft butter in the bowl of an electric mixer.
2.     Blend for 4 minutes at lowest speed.
3.     Stir together in a separate bowl the bread flour, cake flour, and baking powder.
4.     Stir together vanilla, yellow color and condensed milk in another small bowl.
5.      A d d  w e t  a n d  d r y i n g r e d i e n t s  a l o n g  w i t h  oi l   a l t e r n a te l y  t o  m i x e r  u n t i l   it  f o r m s  a  sm oo t h  b a t t er.
6.      Fill well-greased muffin cups with 1/2 cup batter per hole.
7.     Bake for 22 minutes at 375°F.
8.     Allow to cool for 5 minutes then turn out onto wire racks to finish cooling.

Halo-halo Dessert in Batangas



This is the time of the year! Well almost since it is still febuary, summer in the Philippines usually start around March, but you just can't help yourself buying one of these, specially if it's noon time and you've just finished a happy lunch with your family. The weather is hot, the sun is out, you walk around the corner for a fresh breath of air and ('walah!'), you find a little store that sells halo-halo. A perfect dessert!

They sell this for just P10/ea would you believe that. Ah, God is so good! 

Some of the best halo-halo i have ever tasted can be bought in Chowking and Razon's ( popular food chains in the Philippines).

How do you make one?

 Well generally halo-halo is a mixture of shaved ice and evaporated milk to which are added various boiled sweet beans and fruits, and served in a tall glass or bowl..

There are various ways of mixing it but here are the one's commonly used.

Boiled kidney beansgarbanzossugar palm fruit (kaong), coconut sport(macapuno), and plantains caramelized in sugar, jackfruit (langkâ), gulamantapioca or Tae,nata de cocosweet potato (kamote), pounded crushed young rice (pinipig). In terms of arrangement, most of the ingredients (fruits, beans, and other sweets) are first placed inside the tall glass, followed by the shaved ice. This is then sprinkled with sugar, and topped with either (or a combination of) leche flanpurple yam (ubeng pula), or ice creamEvaporated milk is poured into the mixture upon serving.
