Kabayan or Kababayan muffin for lunch

Yes, that is right, i only ate 4 of these Pinoy muffins called kabayan for lunch. It was part of my weight loss challenge. 


Just 4 of these and it made me full right away. Well, it's not one of those breads that looks so big in the outside but inside, it really is just full of air. This is one has full, intact, rich taste packed in that small size of it.


I've been eating this muffin ever since i was a kid. And i kinda grew into it. 


Like with some of its's pinoy bread counterpart pan de sal and ensaymada, kabayan great with hot chocolate or coffee.


This is also very affordable and you can buy it at any small or big bakery is nearest you.





INGREDIENTS:

  • 1 1/2 cups all purpose flour
  • 3/4 cup brown sugar
  • 2 tsp baking powder
  • 2 eggs
  • 3/4 cup milk
  • 1/2 cup  cooking oil 
  • 2 tbsp vanilla extract   
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 tbsp melted butter
1/4 cup sugar for sprinkling  (optional)



 Baking procedures:

1.  Combine salt, sugar, cream of tartar and soft butter in the bowl of an electric mixer.
2.     Blend for 4 minutes at lowest speed.
3.     Stir together in a separate bowl the bread flour, cake flour, and baking powder.
4.     Stir together vanilla, yellow color and condensed milk in another small bowl.
5.      A d d  w e t  a n d  d r y i n g r e d i e n t s  a l o n g  w i t h  oi l   a l t e r n a te l y  t o  m i x e r  u n t i l   it  f o r m s  a  sm oo t h  b a t t er.
6.      Fill well-greased muffin cups with 1/2 cup batter per hole.
7.     Bake for 22 minutes at 375°F.
8.     Allow to cool for 5 minutes then turn out onto wire racks to finish cooling.
